Barbecue Pork

Ingredients:
  • Pork fillet
  • 2 tbsp tomato sauce
  • 1 teaspoon olive oil
  • 2 tbsp brown sauce - or oyster sauce
  • 2 tbsp soy sauce
  • 1 tsp lemon
  • A dash of pepper
  • A dash of Paprika, powder
  • 1/8 tsp dried Basilicom
  • 2 tbsp Vinegar
  • 1 tbsp barbecue spices
Method:
  1. Combine all the marinade ingredients and then marinate the pork overnight or for 2 hours.
  2. Remove the pork from the marinade. Put a small amount of oil in grilling pan and seal the pork.
  3. Place the pork in the oven at 180°C for 30-40 minutes, let it rest for 10 minutes before serving.

Ginataan



Ingredients:
  • 1 Coconut grated or 1 can coconut milk ( you can buy at oriental store )
  • 1 Cup Sago or Tapioca
  • 2 - 4 pcs. Gabi - Optional
  • 1 glass Macapuno
  • 2 - 3 pcs. Camote diced
  • 4 Saba bananas, sliced crosswise
  • 6 Section nangka or bread fruit in Strips
  • 1 - 1 ½ Cup sugar
  • 1/8 tsp. Vanilla flavour
Cooking Procedure:
  1. Add ½ Cup warm water to coconut. Put in a cheesecloth, wring to get 1 Cup thick coconut milk.
  2. Strain and set aside. Repeat using 2 Cups warm water. Strain and boil.
  3. Add Tapioca, gabi and ubi. Cook until half done.
  4. Drop Camote, Bananas and nangka and Macapuno. Blend in sugar.
  5. Pour Vanilla flavour and thick coconut milk before removing.
  6. Cook until done. Stir occasionally.

Longganisa

Ingredients:
  • kilong giniling na baboy (huwag haluan ng taba)
  • ½ kilong taba ng baboy, hiniwa ng pakuwadrado
  • ¼ kutsaritang salitre (nabibili sa botika o grocery)
  • 5 ulo ng bawang, pinitpit
  • 1/3 kutsaritang dinurog na dahon ng laurel
  • 3 kutsarang asukal na pula
  • ¼ tasang toyo
  • 1/3 tasang suka
  • 1½ kutsaritang asin
  • 2 kutsaritang paprika
  • 1 kutsaritang pamintang buo
  • 1 kutsaritang siling pula, tinadtad
  • sausage casing o pampalambot ng longganisa (mabibili sa mga palengke o grocery)
Procedure:
  1. Sa isang malaking mangkok, paghaluin ang lahat ng sangkap (maliban sa sausage casing).
  2. Palipasin ng isa hanggang dalawang oras.
  3. Pagkaraan ibabad ang karne, talian ng sinulid na pang-luto ang isang dulo ng sausage casing at dahan-dahang ipasok ang karne.
  4. Hatiin sa nais na laki ang longganisa sa pamamagitan ng pagtali ng mahigpit sa gitna ng longganisa.
  5. Itabi sa refrigerator ang longganisa at palipasin ng dalawang araw.
  6. Pagkaraan ng dalawang araw, maari ng lutuin ang longganisa.
  7. Ilagay ito sa isang kawali. Buhusan ng 1/2-1 tasang tubig ang longganisa o hanggang malubog ang longganisa.
  8. Pakuluan sa mahinang apoy hanggang maubos ang tubig. Hayaang maluto sa sariling mantika ang longganisa.
  9. Lagyan ng kaunting mantika kapag natuyuan ng longganisa.
Tips:
Masarap na gawing sawsawan ng longganisa ang hiniwang kamatis at patis.

Beef Tapa

Ingredients:
  • 1 kilo tenderloin,hiniwa ng maninipis
  • 1 tasa patis
  • ½ tasa asukal
  • ¼ tasa iodized salt
  • 3 kutsarang pamintang durog
  • 4 ulo ng bawang, dinikdik

Procedure:
  1. Sa isang malaking mangkok, paghalu-haluin ang lahat ng sangkap.ibabad dito ang tenderloin.
  2. Ilagay sa refrigerator ng magdamag
  3. Ang beef tapa ay masarap na pang-almusal
  4. Prituhin sa mahinang apoy.

LeT-Che F.L.An


Ingredients:
  • 2 Cups Liberty Milk
  • 8 egg yolks
  • 1 tsp. Lemon rind or Vanilla
  • 1 Cup sugar
  • ½ - 1 Cup Caramel Syrup
LeT-Che F.L.An Cooking Procedure:
  • Scald the milk in double-Boiler 15 minutes. Beat egg yolks. Add the sugar, milk and flavoring. Pour into 1 quart mold.
  • Place the in large plan half-filled with water.
  • Steam or bake for about 1 hour or until mixture becomes firm.
  • Cool before removing from mold. ( If desired , line mold with caramel syrup before pouring in mixture for steaming or baking ).
Recipe of Caramel Syrup:
Caramelized Sugar:

  • 1 Cup sugar
  • ½ Cup hot water
LeT-Che F.L.An Procedure of Caramelized Sugar:
  • Melt sugar in a heavy metal container. As soon as sugar is golden brown, add ½ Cup hot water to dissolve caramelized sugar and form syrup. May be stored in covered bottle.

Deluxe Mini Pizza



Ingredients:

Topping:

  • Tomato Sauce
  • Mozarella, chopped
  • Schinken, chopped
  • Salami, chopped
  • Geen leafy Parsley, chopped, put on top of mini pizza

Note: You can also use any kind of ingredients-topping if you wish.

Making Pizza Dough:

This recipe will make enough Pizza dough for two. " Deluxe Mini Pizzas, it's a good place to start if you've never hand-made dough before. It's not too much to work with at one time and requires no special machinery, (except your hands).
  • 1 1/2 Cups - Warm water
  • 2 Tbsp. - Sugar
  • 1 - 1/4 oz. Packet or 2 1/4 tsp. - active dry yeast, (fresh, not out-dated)
  • 1 1/2 Tsp. - Salt
  • 2 Tbsp. - Olive oil
  • 4 Cups - White, all-purpose flour
  1. Mix water yeast and sugar in a bowl and let stand for 2 - 4 min. Add remaining ingredients and knead the dough for 6-12 Minutes until elastic.
  2. Now Your can start making your Deluxe Mini Pizza by putting the Topping ingredients.
  3. Bake 12 - 15 Minutes. Or until golden brown. Serve hot. And you can serve also with Tabasco.
Preheat Oven:
Bake: 15 - 18 Minutes at 180°C
