Crispy Tilapia

Ingredients:
  • Tilapia
Mixture:
  • 1 egg - beaten
  • 3 ice cubes
  • ½ tsp. Salt
  • 2 tbsp. Water
  1. Ang Mixture: ay haluin lang itong lahat ng maigi. Kaya may ice cubes para lumamig at saka kapag ipritu ay dyan malutong ang isda.
Procedure:
  1. Ang ulo at ang buntot ng Tilapia ay lagyan ng kaunting Asin, itlog kaunti na binati, cornstarch at himasin. At unahin pag prito. Itabi.
  2. Ngayon ay isuond naman natin pagprito ay ang laman ng Tilapia.
  3. Bago prituhin ang ang laman Tilapia ay e deep muna natin sa mixture na may Ice cubes at cornstarch, saka prituhin. Kapag maramdaman na ang outer niya ay malutong na at golden brown na ang kulay, iyan ay luto na.
Sawsawan ng Crispy Tilapia:
  • 1 Sibuyas Bombay
  • 4 pcs, red hot chilii - sliced
  • 1 tbsp. White sugar
  • 4 tbsp. Soya sauce
  • 4tbsp. White vinegar
  1. Haluin lang itong lahat at ang chilli ay slice ng maninipis.
  2. Ang sunod na gagawin ay ang piniritu na katawan ng ulo ng isda na kasama ang buntot ay dyan ipatong ang piniritu na laman, e-arrange lang sa plato at dekorasyonan ng onion leaves na hinwa.
TIP:
  • Puydi gawin niyo kahit anong isda basta malaki - kasing laki ng Tilapia.

Calamare ( Fried Squid ) Pusit

Ingredients:
  • 1 - 2 Pusit - tanggalin ang mata
  • 1 egg
  • Bread crumbs
  • Flour
  • Asin
  • vitsen
  • Suka na may chilli , sibuyas - para sa sawsawan….etc…
Paraan:
  • Hiwain ang pusit. Ring ang hiwa at hindi masyado makapal ang pagkahiwa.
  • Lagyan ng harina ang itlog, asin, vitsen, at e-mix lang ng maigi
  • Ihulog ang Calamare sa minimix na itlog… sa mixture.
  • Tapos ihulog sa bread crumbs. At ipiritu hanggang mag golden Brown.
Sawsawan:
  • Maraming chilli
  • Maraming sibuyas Bombay
OR:
  • 2 pcs. sibuyas
  • ½ glass suka
  • 4 pcs bawang - sliced
  • 4 - 6 pcs red hot chilli - sliced
  • 2 tbsp. Soya sauce - light
  • 1 tsp. Patis ( Optional )
  • 1/8 tsp. salt
  • Vitsen - Optional

Alimasag Pinaisan

Ingredients:
  • 1 Kilo crabs
  • 2 - 3 tablespoon cooking oil
  • 6 cloves garlic, minced
  • 1 thumb ginger, chopped
  • ½ of broth cube / Maggi cube
  • 2 pcs. Chillis ( Or: Siling labuyo, seeded and sliced )
  • 2 Medium onion, chopped
  • 2 stalks lemon grass / tanglad
  • 1 Cup Young coconut meat (buko) cut into Strips
  • 1 Cup coconut cream / Or: coconut milk
  • 1 small green bell pepper, sliced
  • 1 samll red bell pepper, sliced
  • 1 tablespoon fish sauce / Patis
  • 1/8 teaspoon black pepper, powder
Cooking Procedure for Crab Meat Mixture:
  1. Wash/clean crabs
  2. Steam crabs for 10 - 15 minutes, then allow to cool. Flake crabmeat.
  3. In a sauce pan saute garlic, ginger, and onions for 2 - 4 minutes.
  4. Add bell pepper, chillis, lemon grass, broth cube and coconut meat, and simmer for 4 minutes.
  5. Pour in coconut cream/ Or: coconut milk, let it cook until sauce is thickens.
  6. Drop crab meat and season with fish sauce and black pepper.
Crab Meat Filling:
  1. Stuff crab meat mixture into cleaned Shells, top with red bell pepper, green bell pepper, and wrap in banana leaves, tie bot Ends securely.
  2. Broil until the leaves are seared.
Wrapper:
  • Banana leaves, cut into 10‘x11‘
Garnishing:
  • Red bell pepper
  • Green bell pepper
Note:
  • Clean crab Shell thoroughly and let it dry. Set aside.
  • Before wrapping banana leaves pliant, pass leaves slightly over hot flame so that it is suitable for wrapping crab shells mixture.

Grilled Beef Fillet with Asparagus - Mushrooms and white Sauce

Ingredients:
  • ½ Kilo Beef fillet
  • Combine ingredients and rub into Beef fillet:
  • A dash of Salt to tast
  • 1/8 teaspoon ground black pepper
  • 1 teaspoon Olive oil
  • 1 tablespoon Lemon Juice
Garnish to Beef:
  • Parsley, chopped
Procedure:
  • Baked Beef fillet at 180°C / 340°F. Bake for 40 minutes or until meat is done.
  • You can grill also Beef fillet in electric grill or you can broil over charcoal for 20 - 25 minutes in a medium heat.
  • Garnish with chopped parsley. Sliced Beef fillet and arrange on a platter with Asparagus, mushrooms and gravy.
Coking Procedure for
Asparagus:
Ingredients:
Asparagus Methode #1
  • 6 - 8 pieces white Asparagus, medium sized, peel off skin
  • 1 tablespoon white sugar
  • 4 Cups water
  1. Boil water . Add Asparagus and sugar. Simmer for 18 minutes. Then remove from fire. Drain Asparagus.
Asparagus Methode # 2
  • ½ tablespoon butter
  • ½ teaspoon lemon Juice
  • 1 tablespoon parsley, chopped
  • A dash of salt and pepper to taste
  1. In a sauce pan saute butter add Asparagus, lemon juice, parsley and season with salt and pepper to taste.
For mushrooms:
  • Mushrooms sliced into half
  • 1 teaspoon olive oil
  • 2 cloves garlic, sliced very fine
  • ½ onion, chopped
  • 1 tablespoon soy sauce
  • ½ tablespoon fresh Parsley, chopped
  • Rosmary
  1. In a separate sauce pan saute garlic, onion, in olive oil. Add mushrooms, soy sauce, parsley, rosmary. Simmer for 4 minutes or until mushroom done. Correct seasoning with salt and pepper.
White Sauce:
  • Combine vinegar mixture:
  • 2 tablespoon spring onion
  • 1 tablespoon white wine vinegar
  • 1 teaspoon vinegar
  • A dash of salt
  • 8 pcs. Peppercorn, crushed
  • 2 teaspoon tarragon, chopped
  • Eggyolk mixture:
  • 2 - 3 pcs. eggylok
  • ½ Cup soft butter
  • ¼ teaspoon lemon juice
  • Salt and white pepper, powder- to taste
  • Basil fresh,sliced.Add when sauce almost done.
Procedure of White Sauce:
  1. In a sauce pan, cook white wine vinegar, spring onion, peppercorn and tarragon for 1 - 2 minutes.
  2. Combine cooked vinegar mixture, and eggyolks, in the top of a double Boiler and beat with a wire whisk over hot ( not boiling ) water until yolks are fluffy.
  3. Add little by little a few spoonful of butter to the mixture and beat continually until the butter has melted and the sauce starts to ticken.
  4. Care should be taken that the water in the bottom of the double Boiler neuer boils. Continue to add the butter bit by bit.
  5. Stirring continously. Lastly add the salt, lemon juice, parsley, and basil.
  6. You can add a tablespoon of hot water if you preferred light sauce.
Garnishing:
  • Parsley

BBQ Pork Chop

Ingredients:
  • 6 Pork Chop, sliced thin
Marinate Sauce Mixture:
  • 1 cup BBQ Sauce, ( Mamasitas spicy Sauce ) Or: any of your choice
  • 2 tablespoons Honey
  • 3 tablespoon red wine
  • A dash of salt to taste
  • A dash of ground pepper
Procedure:
  1. Mix BBQ sauce, Honey, red wine, salt, pepper in a Medium bowl.
  2. Marinade pork chop 2 - 4 hours. Keep covered in the refrigerator.
  3. Bake or broil.
Methode # 1
  1. Preheat Oven: and bake at180°C for 45 minutes or bake until golden brown.
  2. Methode # 2
  3. Grill Pork chop over electric grill. Or you can broil over charcoal for 15 to 20 minutes in a Medium heat. Baste all the while with Marinade sauce to the pork using the basting brush.
Tips:
  • Serve with rice or any as you wish;-)

BBQ - Chicken Wrapped in Bacon

Ingredients:
  • ½ Kilo chicken, boneless - sliced on your desired sized
  • Skewers, Bamboo stick ), soak skewers in water to prevent them from burning when on the grill.
  • 50 - 100 grams bacon, sliced into thin flatten long
  • Sage leaves, fresh - ( salbei )
  • 6 - 8 pcs. Cherry tomatoes
  • 150 grams. white or brown Mushrooms , select round and small sized.
  • 1 red bei bell pepper, sliced cube
  • 1 - 2 onions, sliced quartered
Chicken mixture:
  • 2 tablwspoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon worcestershire sauce
  • 1/8 teaspoon ground black pepper
  • 4 cloves garlic, minced
  • ½ teaspoon nutmeg
  • A dash of salt to taste
Procedure:
  1. Combine chicken mixture together and add chicken cube. Marinade for 2 to 4. Keep refrigerated.
  2. First Step: wrap chicken with bacon.
  3. Second Step: Skewer wrapped chicken pieces in bamboo sticks, then 2 pcs. sage leaves, then cherry tomato, mushrooms,then, chicken, then onion,mushrooms, chicken again, then bell pepper. Skewers the chicken at least 6 - 8 pcs. You can also add more chicken and vegetables if you want.
  4. Grill BBQ-chicken wrapped in Bacon over electric grill Or you can broil over charcoal for 12 to 15 minutes.
  5. Brush both sides with marinade sauce to the chicken using the basting brush.
Tips:
  • This recipe can be use also to BBQ - Pork. Just omit bacon.
  • You can serve with your favorite dipping sauce.
Chicken Garlic Sauce:
  • 4 - 6 cloves garlic, pell off skin then sliced
  • 2 Medium sized red bell pepper, sliced cubed ( atsal )
  • 4 - 6 tablespoon light mayonaise
  • A dash of salt to tast
Procedure:
  • Mix all garlic, bell pepper, mayonaise, salt in a blender, beat until smooth.
  • Arrange grilled chicken or fried chicken on a plater with garlic sauce.
