Ingredients:- 1 Kilo crabs
- 2 - 3 tablespoon cooking oil
- 6 cloves garlic, minced
- 1 thumb ginger, chopped
- ½ of broth cube / Maggi cube
- 2 pcs. Chillis ( Or: Siling labuyo, seeded and sliced )
- 2 Medium onion, chopped
- 2 stalks lemon grass / tanglad
- 1 Cup Young coconut meat (buko) cut into Strips
- 1 Cup coconut cream / Or: coconut milk
- 1 small green bell pepper, sliced
- 1 samll red bell pepper, sliced
- 1 tablespoon fish sauce / Patis
- 1/8 teaspoon black pepper, powder
Cooking Procedure for Crab Meat Mixture:- Wash/clean crabs
- Steam crabs for 10 - 15 minutes, then allow to cool. Flake crabmeat.
- In a sauce pan saute garlic, ginger, and onions for 2 - 4 minutes.
- Add bell pepper, chillis, lemon grass, broth cube and coconut meat, and simmer for 4 minutes.
- Pour in coconut cream/ Or: coconut milk, let it cook until sauce is thickens.
- Drop crab meat and season with fish sauce and black pepper.
Crab Meat Filling:- Stuff crab meat mixture into cleaned Shells, top with red bell pepper, green bell pepper, and wrap in banana leaves, tie bot Ends securely.
- Broil until the leaves are seared.
Wrapper:- Banana leaves, cut into 10‘x11‘
Garnishing:- Red bell pepper
- Green bell pepper
Note:- Clean crab Shell thoroughly and let it dry. Set aside.
- Before wrapping banana leaves pliant, pass leaves slightly over hot flame so that it is suitable for wrapping crab shells mixture.
