Crispy Pata With Rice and Sauce




Preparation & drying: 5 hours to 6 hours or 1 day
Estimated cooking time: 50 to 70 minutes

Ingredients:
  • 4 pcs. Pata or paa ng baboy
  • 2 pcs bawang
  • 2 kutsarita asin
  • 1 kutsara Patis
  • 1 teaspoon baking powder, optional
  • Tubig, palambutain ang pata
  • Mantika, pampritu sa crispy pata
Crispy Pata Cooking Instructions:
  1. Palambutin ang paa at lagyan ng bawang kung magpakulo at asin after 30 minutes ay ilagay ang baking powder at pakuluin uli hanggang sa lumabot siya.
  2. Kapag malambot na ay hanguin sa kaldero at ilagay sa plato, patuyoin at himas-himasan ng patis ang buong pata.
  3. Pagkatapos ay ilagay sa freezer mga 5 - 6 hours lang.
  4. Pagkatapos ay kunin sa freezer at magpainit ng maraming mantika at ipiritu.
  5. Kailangan na mainit na mainit ang mantika at kailangan nakahanda ng pantakip kapag nilalagay na ay takpan agad.
  6. Kapag Hindi na pumuputok ay baligtarin, pero patayin muna ang apoy at takpan uli.
  7. Para malaman kung puydi na hanguin ay itaktak lang ang balat ng Crispy Pata.
  8. Kapag malutong na ay luto na.
Serve with Sawsawan:

Crispy Pata Dip Sauce:
  • Mix 3/4 cup of vinegar - suka
  • 1 tbsp. brown sugar . asukal
  • 1/4 cup soy sauce - toyo
  • 2 cloves of crushed garlic, or tinadtad na bawang
  • 1 head of diced onion - sibuyas bombay
  • 2 hot pepper - siling labuyo
  • ½ - 1 tsp. Patis
  • 1 tbsp. Kalamansi Juice or Lemon Juice
  • Salt - asin
  • Pepper - powder

Chicken A La King

Ingredients:
  • 2 tbsps. butter
  • 1/2 tbsp. flour
  • 1/2 tbsp. cornstarch
  • 1/2 - 1 cup chicken stock
  • 1/2 cup evaporated milk
  • 1 chicken cube
  • A dash of salt
  • A dash of black pepper, powder
  • 1 cup boiled chicken, diced
  • 1/2 cup sliced mushrooms, sauted in 1/8 tsp. sesame oil
  • 1/4 cup pimientos, diced
  • 1 egg yolk, slightly beaten
  • 2 tbsps. sherry
  • 10-12 pcs. loaf bread, toasted
Procedure:
  1. Melt butter in a saucepan. Stir in flour and cornstarch. Pour stock and scalded milk gradually, stirring constantly. Cook slowly until slightly thickend.
  2. Season chicken cube or knorr seasoning, a dash of salt and pepper. Add the diced chicken, sliced mushrooms, green pepper and pimientos.
  3. Blend in the egg yolk and sherry.
  4. Cook until thick.
  5. Serve on toasted bread.

Beef With Oyster Sauce

Ingredients:
  • 1/2 kilo beef tenderloin, in strips
  • 2 tbsps. white wine
  • 1-1/2 tbsps. cornstarch
  • 1/2 tbsp. sugar
  • 1 beef cube or knorr seasoning
  • 2 tbsps. soy sauce
  • 1/4 cup cooking oil
  • 1 onion, sliced in rings
  • 2 cloves garlic, minced
  • 1 spring onion
  • 2 tbsps. oyster sauce
  • 1 red bell pepper - optional, sliced in strips
  • Frozen green peas, thawed then boiled
Procedure:

  1. Marinate beef in wine and cornstarch for 10-15 minutes. Set aside.
  2. Combine sugar, beef cube or knorr seasoning and soy sauce. Set aside.
  3. Bring cooking oil to a full boil.
  4. Drop beef all at once. Cook for 15 - 20 minutes. Stir constantly. When done, drain out exist fat.
  5. Put back beef in pan, add minced garlic, sliced onions, soy sauce and sugar mixture. Stir 2-4 minutes and add spring onions. Remove from fire. Flavor with oyster sauce.
  6. Garnish with green peas.
  7. Serve immediately with hot plain rice.

Humba

Ingredients:
  • 1 Kilo Pork Pigue or Pork Ham, whole
  • 2 cloves garlic, minced
  • 1 cup water
  • 2 tbsp. soy sauce
  • 2 tbsp. brown sugar
  • 1/2 tsp. salt
  • 1/2 cup vinegar
  • 1 sprig oregano
  • 1 bay leaf ( laurel )
  • 2 tbsps. heaping tbsp. tausi ( salted )
  • 2 tbsps. fat
  • 1/2 sliced maggi cube or knorr seasoning
  • a dash of vitsen - optional
Procedure:

  • Mix all ingredients and cook until pork is tender. Slice pork into serving pieces. Arrange on a platter, set aside. Strain sauce and pour over pork.
  • Serve hot
