Ingredients:
Combine in:
  • 1 Kilo Prawns
  • 1 - 2 can coconut milk
  • 1 pc. broth cube ( Maggi cube )
  • 1 tablespoon fish sauce ( patis )
  • 1 thumb ginger ( luy-a ), sliced
  • 4 cloves garlic, crushed
  • 2 pcs. Medium sized onions, sliced
  • 1 stalk Lemon grass / Or: tanglad ( Or: Lemon Powder )
  • 1 pc. red hot chilli, sliced - ( optional )
  • 8 pcs. black whole pepper, crushed
  • ½ teaspoon Salt
Cooking Procedure:
  1. Wash Prawns.
  2. Combine all ingredients and put in a pot. Simmer for 45 - 60 minutes or until sauce is thickens. Stir occasionally.
  3. Correct seasoning
  4. Serve with rice

Pork Honey Fried Potatoes


Ingredients # 1
  • 500 grams. Or ½ Kilo Pork boneless, sliced cube
  • 1 teaspoon Honey woodsmoke flavour
  • 1 tablespoon cream cornstarch
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon soya sauce
  • ½ teaspoon Aroma fond or broth cube
  • ½ teaspoon dried basilicom
  • 1/8 teaspoon dried thymian
Cooking Procedure for Ingredients # 1
  1. Combine all ingredients into pork. Deep fry pork mixture in hot oil until light brown. Set aside.
Ingredients # 2
  • 1 tablespoon melted butter or olive oil
  • 2 cloves garlic, chopped
  • 1 pc. Medium onion, sliced
  • 1 Cup broth stock
  • ½ Cup nestle cream or Evap. milk (or whipping cream )
Cooking Procedure for Ingredients # 2
  1. Heat butter or olive oil in a saucepan, saute garlic, onion. Add fried pork and stir.
  2. Add broth stock and cover, let it boil for 15 minutes, then add nestle cream, continue stirring for 4 minutes. Correct seasoning. Serve hot!
  • Garnishing: Green leafy vegetable, cucumber sliced, red radish.
  • Serve with: Rice or Fried Potatoes, cucumber salad, and gravy sauce.


Fried Potatoes
  • 4 - 6 pcs. Medium sized potatoes
  • ½ teaspoon cooking oil
  • ½ teaspoon salt
  • Butter or cooking oil for frying Potatoes
  • Dried thymian
  • Salt or Vegeta
Cooking Procedure for Potatoes:
  1. Pour half water in a kettle. Add potatoes, salt, cooking oil, cover and cook for 25 - 30 minutes.
  2. Then let it cool and peel off skin and slice into flatten about 2cm. thick.
  3. Mix potatoes with salt ( or: vegeta ) and dried thymian.
  4. In a saucepan heat butter or cooking oil and fry potatoes until golden brown.

Pork BBQ In Lemon Marinade

Ingredients:

  • ½ Kilo pork sliced cube / or: on your desired sized.
  • Skewers, Bamboo stick ), soak skewers in water to prevent them from burning when on the grill.
Vegetables:
  • 6 - 8 pcs. Cherry tomatoes
  • 150 grams. white or brown Mushrooms , select round and small sized.
  • 1 red bell pepper, sliced cube
  • 1 - 2 onions, sliced quartered
Lemon mixture:
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon Paprika powder
  • 1/8 teaspoon ground black pepper
  • 4 cloves garlic, minced
  • ½ teaspoon nutmeg
  • A dash of salt to taste
Procedure:
  1. Combine Pork mixture together and add pork cube. Marinade for 2 to 4 hours. Keep refrigerated.
  2. Skewer pork cube,then cherry tomato, mushrooms,the pork cube, then onion,mushrooms, pork cube again, then bell pepper. Skewers the pork at least 8 - 18 pcs. You can also add more pork and vegetables if you want.
  3. Grill Pork BBQ in Lemon over electric grill or in a live hot charcoal for 12 to 15 minutes.
  4. Brush both sides with lemon sauce to the pork using the basting brush.
Tips:
  • You can serve with your favorite dipping sauce.
  • Bread / or: Rice
  • Vegetable salad

Note:
  • You can also cook this recipe in a sauce pan or in wok without skewers ( bamboo stick )
  • Saute pork mixture in a sauce pan until brown. Then add vegetables. Cook until half done. Do not over cook vegetables. Correct Seasoning with salt and pepper.

Crispy Tilapia

Ingredients:
  • Tilapia
Mixture:
  • 1 egg - beaten
  • 3 ice cubes
  • ½ tsp. Salt
  • 2 tbsp. Water
  1. Ang Mixture: ay haluin lang itong lahat ng maigi. Kaya may ice cubes para lumamig at saka kapag ipritu ay dyan malutong ang isda.
Procedure:
  1. Ang ulo at ang buntot ng Tilapia ay lagyan ng kaunting Asin, itlog kaunti na binati, cornstarch at himasin. At unahin pag prito. Itabi.
  2. Ngayon ay isuond naman natin pagprito ay ang laman ng Tilapia.
  3. Bago prituhin ang ang laman Tilapia ay e deep muna natin sa mixture na may Ice cubes at cornstarch, saka prituhin. Kapag maramdaman na ang outer niya ay malutong na at golden brown na ang kulay, iyan ay luto na.
Sawsawan ng Crispy Tilapia:
  • 1 Sibuyas Bombay
  • 4 pcs, red hot chilii - sliced
  • 1 tbsp. White sugar
  • 4 tbsp. Soya sauce
  • 4tbsp. White vinegar
  1. Haluin lang itong lahat at ang chilli ay slice ng maninipis.
  2. Ang sunod na gagawin ay ang piniritu na katawan ng ulo ng isda na kasama ang buntot ay dyan ipatong ang piniritu na laman, e-arrange lang sa plato at dekorasyonan ng onion leaves na hinwa.
TIP:
  • Puydi gawin niyo kahit anong isda basta malaki - kasing laki ng Tilapia.

Calamare ( Fried Squid ) Pusit

Ingredients:
  • 1 - 2 Pusit - tanggalin ang mata
  • 1 egg
  • Bread crumbs
  • Flour
  • Asin
  • vitsen
  • Suka na may chilli , sibuyas - para sa sawsawan….etc…
Paraan:
  • Hiwain ang pusit. Ring ang hiwa at hindi masyado makapal ang pagkahiwa.
  • Lagyan ng harina ang itlog, asin, vitsen, at e-mix lang ng maigi
  • Ihulog ang Calamare sa minimix na itlog… sa mixture.
  • Tapos ihulog sa bread crumbs. At ipiritu hanggang mag golden Brown.
Sawsawan:
  • Maraming chilli
  • Maraming sibuyas Bombay
OR:
  • 2 pcs. sibuyas
  • ½ glass suka
  • 4 pcs bawang - sliced
  • 4 - 6 pcs red hot chilli - sliced
  • 2 tbsp. Soya sauce - light
  • 1 tsp. Patis ( Optional )
  • 1/8 tsp. salt
  • Vitsen - Optional

Alimasag Pinaisan

Ingredients:
  • 1 Kilo crabs
  • 2 - 3 tablespoon cooking oil
  • 6 cloves garlic, minced
  • 1 thumb ginger, chopped
  • ½ of broth cube / Maggi cube
  • 2 pcs. Chillis ( Or: Siling labuyo, seeded and sliced )
  • 2 Medium onion, chopped
  • 2 stalks lemon grass / tanglad
  • 1 Cup Young coconut meat (buko) cut into Strips
  • 1 Cup coconut cream / Or: coconut milk
  • 1 small green bell pepper, sliced
  • 1 samll red bell pepper, sliced
  • 1 tablespoon fish sauce / Patis
  • 1/8 teaspoon black pepper, powder
Cooking Procedure for Crab Meat Mixture:
  1. Wash/clean crabs
  2. Steam crabs for 10 - 15 minutes, then allow to cool. Flake crabmeat.
  3. In a sauce pan saute garlic, ginger, and onions for 2 - 4 minutes.
  4. Add bell pepper, chillis, lemon grass, broth cube and coconut meat, and simmer for 4 minutes.
  5. Pour in coconut cream/ Or: coconut milk, let it cook until sauce is thickens.
  6. Drop crab meat and season with fish sauce and black pepper.
Crab Meat Filling:
  1. Stuff crab meat mixture into cleaned Shells, top with red bell pepper, green bell pepper, and wrap in banana leaves, tie bot Ends securely.
  2. Broil until the leaves are seared.
Wrapper:
  • Banana leaves, cut into 10‘x11‘
Garnishing:
  • Red bell pepper
  • Green bell pepper
Note:
  • Clean crab Shell thoroughly and let it dry. Set aside.
  • Before wrapping banana leaves pliant, pass leaves slightly over hot flame so that it is suitable for wrapping crab shells mixture.

Grilled Beef Fillet with Asparagus - Mushrooms and white Sauce

Ingredients:
  • ½ Kilo Beef fillet
  • Combine ingredients and rub into Beef fillet:
  • A dash of Salt to tast
  • 1/8 teaspoon ground black pepper
  • 1 teaspoon Olive oil
  • 1 tablespoon Lemon Juice
Garnish to Beef:
  • Parsley, chopped
Procedure:
  • Baked Beef fillet at 180°C / 340°F. Bake for 40 minutes or until meat is done.
  • You can grill also Beef fillet in electric grill or you can broil over charcoal for 20 - 25 minutes in a medium heat.
  • Garnish with chopped parsley. Sliced Beef fillet and arrange on a platter with Asparagus, mushrooms and gravy.
Coking Procedure for
Asparagus:
Ingredients:
Asparagus Methode #1
  • 6 - 8 pieces white Asparagus, medium sized, peel off skin
  • 1 tablespoon white sugar
  • 4 Cups water
  1. Boil water . Add Asparagus and sugar. Simmer for 18 minutes. Then remove from fire. Drain Asparagus.
Asparagus Methode # 2
  • ½ tablespoon butter
  • ½ teaspoon lemon Juice
  • 1 tablespoon parsley, chopped
  • A dash of salt and pepper to taste
  1. In a sauce pan saute butter add Asparagus, lemon juice, parsley and season with salt and pepper to taste.
For mushrooms:
  • Mushrooms sliced into half
  • 1 teaspoon olive oil
  • 2 cloves garlic, sliced very fine
  • ½ onion, chopped
  • 1 tablespoon soy sauce
  • ½ tablespoon fresh Parsley, chopped
  • Rosmary
  1. In a separate sauce pan saute garlic, onion, in olive oil. Add mushrooms, soy sauce, parsley, rosmary. Simmer for 4 minutes or until mushroom done. Correct seasoning with salt and pepper.
White Sauce:
  • Combine vinegar mixture:
  • 2 tablespoon spring onion
  • 1 tablespoon white wine vinegar
  • 1 teaspoon vinegar
  • A dash of salt
  • 8 pcs. Peppercorn, crushed
  • 2 teaspoon tarragon, chopped
  • Eggyolk mixture:
  • 2 - 3 pcs. eggylok
  • ½ Cup soft butter
  • ¼ teaspoon lemon juice
  • Salt and white pepper, powder- to taste
  • Basil fresh,sliced.Add when sauce almost done.
Procedure of White Sauce:
  1. In a sauce pan, cook white wine vinegar, spring onion, peppercorn and tarragon for 1 - 2 minutes.
  2. Combine cooked vinegar mixture, and eggyolks, in the top of a double Boiler and beat with a wire whisk over hot ( not boiling ) water until yolks are fluffy.
  3. Add little by little a few spoonful of butter to the mixture and beat continually until the butter has melted and the sauce starts to ticken.
  4. Care should be taken that the water in the bottom of the double Boiler neuer boils. Continue to add the butter bit by bit.
  5. Stirring continously. Lastly add the salt, lemon juice, parsley, and basil.
  6. You can add a tablespoon of hot water if you preferred light sauce.
Garnishing:
  • Parsley

BBQ Pork Chop

Ingredients:
  • 6 Pork Chop, sliced thin
Marinate Sauce Mixture:
  • 1 cup BBQ Sauce, ( Mamasitas spicy Sauce ) Or: any of your choice
  • 2 tablespoons Honey
  • 3 tablespoon red wine
  • A dash of salt to taste
  • A dash of ground pepper
Procedure:
  1. Mix BBQ sauce, Honey, red wine, salt, pepper in a Medium bowl.
  2. Marinade pork chop 2 - 4 hours. Keep covered in the refrigerator.
  3. Bake or broil.
Methode # 1
  1. Preheat Oven: and bake at180°C for 45 minutes or bake until golden brown.
  2. Methode # 2
  3. Grill Pork chop over electric grill. Or you can broil over charcoal for 15 to 20 minutes in a Medium heat. Baste all the while with Marinade sauce to the pork using the basting brush.

Ingredients:
  • ½ Kilo chicken, boneless - sliced on your desired sized
  • Skewers, Bamboo stick ), soak skewers in water to prevent them from burning when on the grill.
  • 50 - 100 grams bacon, sliced into thin flatten long
  • Sage leaves, fresh - ( salbei )
  • 6 - 8 pcs. Cherry tomatoes
  • 150 grams. white or brown Mushrooms , select round and small sized.
  • 1 red bei bell pepper, sliced cube
  • 1 - 2 onions, sliced quartered
Chicken mixture:
  • 2 tablwspoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon worcestershire sauce
  • 1/8 teaspoon ground black pepper
  • 4 cloves garlic, minced
  • ½ teaspoon nutmeg
  • A dash of salt to taste
Procedure:
  1. Combine chicken mixture together and add chicken cube. Marinade for 2 to 4. Keep refrigerated.
  2. First Step: wrap chicken with bacon.
  3. Second Step: Skewer wrapped chicken pieces in bamboo sticks, then 2 pcs. sage leaves, then cherry tomato, mushrooms,then, chicken, then onion,mushrooms, chicken again, then bell pepper. Skewers the chicken at least 6 - 8 pcs. You can also add more chicken and vegetables if you want.
  4. Grill BBQ-chicken wrapped in Bacon over electric grill Or you can broil over charcoal for 12 to 15 minutes.
  5. Brush both sides with marinade sauce to the chicken using the basting brush.
Tips:
  • This recipe can be use also to BBQ - Pork. Just omit bacon.
  • You can serve with your favorite dipping sauce.
Chicken Garlic Sauce:
  • 4 - 6 cloves garlic, pell off skin then sliced
  • 2 Medium sized red bell pepper, sliced cubed ( atsal )
  • 4 - 6 tablespoon light mayonaise
  • A dash of salt to tast
Procedure:
  • Mix all garlic, bell pepper, mayonaise, salt in a blender, beat until smooth.
  • Arrange grilled chicken or fried chicken on a plater with garlic sauce.

Baked - Fried Fish With Vegetables


Ingredients:

  • ½ Kilo - Tulingan / or: Barilis or: Tambakol ( O kahit anong gusto ninyo na isda )
Fish Seasoning:
  • A dash of Salt
  • A dash of pepper
  • 2 tablespoons lemon juice
  • Dried thyme
  • 1 - 2 cups cooking oil for frying:
Fish Cooking Procedure:
  1. Timplahan ang fish ng asin, pepper, lemon juice, thymian at paghaluin.
  2. Magpainit ng kawali at ilagay ang mantika, kung mainit na ang mantika ay ipritu ang isda. Hanggang maging golden brown.
  3. Serve with grilled Vegetables.
Vegetables:
  • 1 pc. Eggplant, sliced
  • 1 small sized Zuchinni, sliced
  • 1/4 to 1/2 cup Spring onions, sliced
  • 2 pcs. Tomatoes, sliced
  • ½ teaspoon Sesame oil, pampatak sa isda at vegetables before serving.
Vegetables Cooking Procedure:
Ang Vegetables ay timplahan ng:
  • A dash of salt
  • A dash of pepper
  • 1 teaspoon olive oil
  • Pagsamasamahin ang mga ito at pagkatapos ay ilagay sa baking pan at e -bake sa Oven. 180°C - 190°C, Time: 25 or hanggang maging golden brown.

Hipon Na May Sitsaro

Ingredients:
  • 300 grm. Hipon - Binalatan
  • 300 grm. Sitsaro
  • 4 pcs. Bawang dinikdik
  • 2 pcs. Sibuyas Bombay
  • 1/8 teaspoon Paminta
  • 2 tablespoon Oyster sauce
Procedure:
  1. Ang ulo ng hipon ay ilagay sa bowl,lagyan ng tubig at pigain ang ulo para yong katas nya ay lumabas o kaya isalang sa apoy at pakuluan 5 minutes at ito ay pangsabaw mamaya.
  2. Igisa ang bawang, sibuyas Bombay, saka ilagay ang binalatan na hipon at ang sabaw sa ulo ng hipon. Kapag kumulo na ay ilagay ang sitsaro, lagayan ng paminta.
  3. Isunod ang oyster sauce, haluin lang, mga 4 to 6 minutes hintayin lang maluto ang gulay.
  4. Serve hot with Rice.

Bam-I SpeciaL


Ingredients:

  • ½ Kilo vermicelli Noodles / or: Glass Noodles Sotanghon / Or: Chinese egg Noodles, Soak in warm water, then drain and cut with scissor.
  • ½ Kilo Pancit Canton, soak in warm water and drain
  • 300 grams pork, sliced
  • 300 grams chicken breast, slice
  • 200 grams Shrimps, Strips sind and head, sliced
  • 2 pcs. Chinese sausage, sliced, optional
  • 1 tablespoon sambal Oelek / Red chilli paste
  • 1 pc. Maggi cube / broth cube
  • 2 - 4 cloves garlic, minced
  • 2 medium sized onions, sliced
  • 2 tablespoon soya sauce
  • 1 teaspoon fish sauce
  • 2 tablespoon butter / Or: olive oil, for frying
  • A dash of salt
  • ½ teaspoon ground black pepper, powder
Vegetables:
  • 1 stalk leek, finely sliced
  • 1 Medium sized carrots, cut into strips
  • 8 - 10 pcs. Tenga ng daga, ( Black ear fungus ) cut finely - optional
  • 1 ½ Cups cabbage, sliced
Note:
  • In a Separate sauce pan fried Skinnless Shrimps, season with a dash of salt and pepper.
  • Boil chicken breast in 1 - 2 Cups of water for 15 minutes, season with salt and pepper. Set aside broth.
  • Pound Skin and head of Shrimps - pour in ½ Cup hot water, and squeeze to extract juice. Set aside broth.
Procedure:
  1. Saute garlic, in butter or olive oil, add onions, pork and stir until lightly brown, add chicken, sausage and broth stock from Shrimps and chicken, Maggi cube, soya sauce, fish sauce, sambal oelek, Simmer for 4 minutes.
  2. Add vegetables, when vegetables are half cooked, mix in soaked and drain pancit canton/ vermicelli noodles and stir, cook for 1- 2 minutes. Then add fried Shrimps. You can add more broth stock or water if it is necessary.
  3. Season with salt and pepper. Correct seasoning.
Garnishing:
  • 2 Pcs hard boiled eggs, peel off skin and sliced into quartered or flatten.
  • lemon, sliced / Or: Calamansi, sliced
  • Stalk of Parsley

Beef Spicy Curry

Ingredients:
  • 1 Kilo Beef, sliced into cube or flatter
  • 1 tablespoon butter
  • 2 pcs. Medium sized onions, cut into quartered
  • 2 can coconut milk, you can buy at oriental store
  • ½ teaspoon hot chilli, powder
  • 2 pcs. Red hot chillies, sliced
  • 2 pcs. Siling labuyo, mahaba, optional
  • 1 - 2 tablespoon yellow or red curry paste
  • 2 pcs. Peperoni
  • 4 tablespoon tomato paste, optional
  • 1 teaspoon fish sauce ( patis )
  • ½ teaspoon Paprika powder
  • 2 pcs cloves garlic, crushed
  • 1 thumb ginger, sliced
  • ½ teaspoon ground white/black pepper powder
  • 1 teaspoon salt
  • 1 tablespoon worcestershire sauce
  • 1 Maggi broth cube
  • 2 stalks spring onions, sliced
  • ½ Cup hot water
  • 4 - 6 Medium sized potatoes, peel off skin and cut into quartered
  • 2 pcs. Medium sized carrots, peel off skin and sliced into cube
Procedure:
  1. Heat butter in a saucepan and saute garlic, ginger, onions until light brown. Add tomato paste, and the meat and fry for 6 minutes until beef changes color, stirring constantly, add hot water, cover and simmer 20 minutes.
  2. Add half of the coconut milk, yellow paste, fish sauce, maggi broth cube and let it boil for 30 minutes in a medium flame.
  3. Add potatoes, chillies, and add the rest of coconut milk and let it boil for another 10-12 minutes, add carrots, spring onions
  4. Season with salt and pepper.
  5. Correct seasoning and serve hot! With Rice.
Note:
  • Arrange Beef Spicy Curry on a plate with Potatoes and / Or: Rice.

Ingredients:
  • ½ Kilo ground Beef
  • 2 pcs. boiled potato, mashed
  • 2 eggs, beaten
  • 1 onion, chopped
  • 1 teaspoon sugar
  • 1 tablespoon soy sauce
  • 2 tablespoon ginger juice
  • 1 teaspoon salt
  • 1 broth cube, dissolved
  • 1/8 teaspoon ground black pepper
  • 2 cup glutinous rice, soaked overnight
Procedure:
  1. Mix ground Beef, mashed potato, eggs, broth cube, onion, thoroughly. Then add all Other ingredients except rice and mix thoroughly.
  2. Using a tablespoon, shape mixture into balls.
  3. Drain soak rice thoroughly and roll meat balls in it until they are well-covered.
  4. Place meatballs in a steamer over wet cloth and steam for 45 minutes. Serve hot.

Ingredients:
  • 1 Kilo beef kabilugan, whole
  • 3 - 4 tablespoons cooking oil
  • 6 cloves garlic, chopped
  • 4 pcs. onions, sliced
  • 3 pcs. Medium sized potatoes, quartered, fried
  • 1 carrot, cut in ½ round
  • 1 sliced dayap or lemond with rind
  • 3 tablespoons soy sauce
  • 6 pcs. Peppercorn, crushed
  • 1 Cup tomato sauce
  • 2 - 4 pcs. fresh tomatoes, chopped
  • 2 pcs. Laurel, bay leaf
  • 1 broth cube, dissolved
  • ½ teaspoon salt
  • 2 - 3 Cups hot water
Procedure:
  1. Brown meat in cooking oil. Set aside.

Ingredients:
  • 12 pcs chicken wings
  • 2 Cups oil, pampritu sa chicken wings

  • 1 cup broth stock or water
  • 1 cup dabong sa kawayan
  • 1 tablespoon cornstarch, dispersed
  • ½ teaspoon sesame oil
  • A dash of vitsen, optional
  • A dash of ground black pepper
Procedure:
  1. Ang chicken wings ay budburan ng kaunting asin,pepper himasin lang at ipirito sa kawali hanggang mag light brown. Ilagay sa plato at itabi.

Pork Tocino

Ingredients:
  • 1 Kilo Pork, dadagdagan mo lang ng ingredients
  • ½ Cup Apple cider venigar or Coconut white Vinegar
  • 1 Cup 7-up
  • ½ Cup Soy sauce
  • 4 tablespoons brown sugar/or Brown only for Tocino ( Tusino Flavor )
  • ½ tsp. Salt
  • 1 tbsp. Black pepper, white pepper, red pepper
  • 2 tbsp. Garlic powder / or 6 cloves garlic sliced very fine
  • 1 tbsp. Aswete / Annato - Itunaw sa tubig
  • 2 tbsp. Oyster sauce
  • A dash of Curing Salt ( Salitre ) or Saltpeter
  • ½ tbsp. Phosphate - ( Pink Color )
Procedure:
  1. Hiwain ang Pork ng medyo malapad.
  2. Ang lahat ng ingredients ay paghalu-haluin at ibuhos sa karne

Home Made Chicken Tocino

Ingredients:
  • Boneless chicken, Thigh
  • 1tsp. Cooking salt
  • 4 tbsp. Sugar or special sugar for Tocino
  • 1 glass water
  • 4 cloves Garlic sliced very fine
  • 1/8 tsp. Curing salt / Salitre
  • 1 tbsp. Phosphate - Tocino flavor ( Orange color )
  • 7-up or Sprite
  • Black pepper powder or pepper na buo dinurog
Mixture:
  1. Ang unang gagawin ay e -mix ang Phosphate, curing salt, cooking salt, at water, haluin lang hanggang matunaw ang salt and Phosphate.
  2. Kapag gumawa ng Chicken Tocino ay alisin ang skin.
  3. Ngayon ang mixture ay ihalo doon sa chicken, at kailangan ipa absorve ang chicken sa mixture.
  4. Saka, ihalo naman ang natitirang ingredients: Sugar, garlic, sprite or 7-up, pepper. Haluin lang ng maigi, kapag nahalu na ay ilagay sa refrigerator.
  5. E-Marinate: 2 hours or over night.
  • Puydi na e-fry ang Chicken Tocino.

Ingredients:
  • 1 - 2 Pusit Malaki - Tanggalin ang laman ng loob at ang Ulo.
  • 2 pcs. Kamatis
  • 2 pcs. Sibuyas Bombay - sliced maliliit
  • 100 grm. Cheese
  • Asin
  • 8 pcs. Bawang - dinikdik
  • 1 tsp. Sesame oil
  • ½ tsp. Butter - para ipahid sa sizzling plate.
Procedure:
  1. Ipritu ang bawang hangang golden Brown. Set aside.
  2. Ihalo ang cheese, kamatis at sibuyas saka lagyan ng asin. Ihalo lang saka ilagay sa loob ng pusit.
  3. Ibalik ang ulo sa pusit at lagyan ng tootpick para hindi matanggal ang ulo.
  4. Sa pinag prituhan ng bawang ay doon ipritu ang pusit. 15 minutes lang ang pag pritu ng pusit at baliktarin lang.
  5. Tapos hanguin at hiwain.

Fried Pusit

Ingredients:
  • 1 - 2 Big Pusit - sliced pahaba Ring style
  • 8 - 10 pcs. Bawang
  • 2 pcs. Chilli Green - Mahaba ( pahaba ang hiwa )
  • 2 pcs. Sibuyas Bombay - hiwa maliliit - Para sa sawsawan
  • ½ glass white vinegar
  • A dash of vitsen
  • 3 tbsp. Flour
  • 1/8 tsp. Salt
  • OiL - Mantika para prituhan ng pusit mixture.
Procedure:
  1. Linisin lang ng maigi ang loob ng pusit, tanggalin ang balat yong itim sa balat kailangan puti lang ang balat sa pusit.
  2. Ang ulo ay tanggalin ang mata.
  3. Sa malaking Bowl na may takip ay lagyan ng flour at asin at E-shake lang natin ang lalagyan para maghalu sila.
  4. Ilagay ngayon sa loob ng bowl ang pusit at haluin-haluin lang, Himas-himasin
  5. Magpainit ng mantika
  6. Kapag mainit na ang mantika ay ipiritu na ang pusit na hinalo - 5 to 7 minutes lang pag pritu, huwag matagal.

Yha-Young's Eskabitse Vinegar

Ingredients:
Fish:
  • ½ - 1 Kilo fish, sliced ( Cleaned )
  • Fish Season with: salt, pepper, lemon Juice and fry.
  • 1 - 2 Cups Oil for frying.
Ingredients for Yha-Young‘s Eskabitse Vinegar:
  • 1 tablespoon cooking oil / Or: olive oil
  • 2 pcs. Medium sized red onions, sliced into ring
  • 2 cloved garlic, minced
  • 2 thumbs ginger, diced
  • 2 Medium sized carrots, cut in rounds
  • 1 pcs. Small sized red bell pepper, diced
  • 1 pcs. Small sized green bell pepper, diced
  • 2- 4 pcs. Tomatoes, sliced
  • A dash of ground black pepper
Combine Coconut Vinegar mixture:
  • ½ Cup coconut vinegar or: Apple cider vinegar
  • ½ Cup brown sugar
  • ½ teaspoon salt
  • ½ - 1 Cup broth stock or water
  • 1 - 2 tablespoon soya sauce
  • 1 - 2 teaspoon cream cornstarch, dispersed in 1 tablespoon water
Cooking Procedure:
  1. Fry fish and set aside.
  2. Combine vinegar, sugar, salt,broth stock, soya sauce and cornstarch. Set aside.
  3. Heat cooking oil and sauter garlic, onion, ginger, stir until lightly brown. Add tomatoes. Continue stirring.
  4. Pour Sweet and Sour Mixture. Simmer for 6 minutes.
  5. Then add carrots. Simmer until carrots half cook.
  6. Add fried fish. And let it cook for 1 - 2 minutes and garnish with bell pepper. Serve!

Ingredients:
  • 1 sibuyas Bombay
  • ½ teaspoon butter
  • 4 pcs. Bawang, tinadtad

  • 2 - 4 Cups kanin na malamig
Procedure:

Beef With Baguio Beans

Ingredients:
Marinate Mixture:
  • 2 kutsarita cornstarch
  • 1 kutsara oyster sauce
  • 2 kutsara dark soya sauce
  • 2 kutsarita olive oil or peanut butter
  • ½ Kilo Beef - or fillet steak in 2,5 cm sliced
Sauce:
  • 2 kutsara olive or
  • 3 piraso bawang, tinadtad

  • 220 grms. Baguio beans, sliced into half
  • 25 grms. Cashew nuts
  • 25 grms. Bamboo shoot, in a can
  • 1 kutsarita light soya sauce
  • 1 kutsarita dark soya sauce
  • 2 kutsarita oyster sauce
  • 2 kutsarita rice wine or dry Sherry
  • 1 Cup Beef stock broth
  • 2 kutsarita cornstarch
  • 4 kutsarita tubig
  • Salt
  • Pepper
Para sa marinate:
  1. Ang soya sauce, oyster sauce, olive oil ay paghaluin, at isama na rin ang ibang ingredients para sa marinate.
  2. Ang karne ay ilagay sa bowl, ang marinate mixture ay ihalo, haluin lang ng maigi at takpan.
  3. Ilagay sa refrigerator 30 minutes.
Para sa Sauce:
  1. Magpainit ng kawali at ilagay ang bawang, sibuyas bombay, haluin lang hanggang maging light brown. At ialgay ang cashew nuts.
  2. Ang karne na minarinate ay isunod pag gisa, tanggalin lang sa sauce at itabi muna ang sauce niya. Kapag naigisa na ang karne ay halu-haluin lang at takpan 8-10 minutes.

  • 2 pieces mahaba ba siling labuyo

  • Pechay or repolyo
  • Pamintang buo na dinurog
  • Patis - fish sauce
Paraan:
  1. Pakuluin ang baka,kapag kumulo na ay itapon ang sabaw ng unang pinakuluan.
  2. Ibalik uli ang baka sa kaldero at ihalo ang Sibuyas Bombay,Pamintang buo,Bawang,Luy-a at Kamatis,

Ingredients:
  • 2 Cups chicken stock
  • 1 clove garlic, minced
  • 1 onion, chopped
  • 1 teaspoon olive oil or butter
  • 1 Maggi cube or chicken cube
  • Parsley - / Petersilie
  • Salt to taste
  • A dash of pepper
  • 1 tbspoon cornstarch, dispersed with 1 tablespoon water
Garnishing:

Procedure:
  1. Saute garlic, and onion in olive oil. Stir and add chicken broth.
  2. Simmer for 3 minutes and add the rest of ingredients. Boil 5 minutes more.

Lechon Liver Sauce

Ingredients:
  • 1/8 Cup liver paste
  • 4 tablespoons coconut vinegar or other vinegar
  • 1 ½ Cups water
  • ½ Cup sugar
  • ¾ teaspoon ground black pepper
  • 2 tablespoons cooking oil
  • 1 head garlic, minced
  • 8 pcs. Sibuyas tagalog or shallots, sliced fine
  • 4 - 6 tablespoon bread crumbs, dispersed in 1 Cup water
  • Kasubha ( wild saffron fried in hot oil or 1 bay leaf, optional )
Procedure:
  1. Mix liver paste, 1-½ Cup water, bread crumbs, sugar, ½ kasubha, laurel, salt, pepper. Blend well and set aside.
  2. Saute garlid in cooking oil. Add onions, and fry until tender . Add the liver mixture. Boil without stirring.
  3. Do not cover the saucepan. Add bread crumbs dispersed in 1 cup water. Cook ‘till it thickens.
  4. Serve topped with the rest of the crisp brown garlic and fried kasubha.

Ingredients:
  • Pork fillet
  • 2 tbsp tomato sauce
  • 1 teaspoon olive oil
  • 2 tbsp brown sauce - or oyster sauce
  • 2 tbsp soy sauce
  • 1 tsp lemon
  • A dash of pepper
  • A dash of Paprika, powder
  • 1/8 tsp dried Basilicom
  • 2 tbsp Vinegar
  • 1 tbsp barbecue spices
Procedure:
  1. Combine all the marinade ingredients and then marinate the pork overnight or for 2 hours.
  2. Remove the pork from the marinade. Put a small amount of oil in grilling pan and seal the pork.
  3. Place the pork in the oven at 180°C for 30-40 minutes, let it rest for 10 minutes before serving.

BBQ - Chicken Legs With Exotic Aroma

Ingredients:
  • 5 pcs. Chicken Legs
  • 1 pc. Onions, choped ( sibuyas Bombay )

  • 2 tablespoons lemon Juice ( Zitrone )
Procedure:
  1. Paghaluin ang lahat ng ingredients at ihalo sa malinis na chicken legs.
  2. Ilagay ngayon sa kaldero ang pinaghalu na ingredients at ipailalim ang sibuyas Bombay.
  3. Pakuluan ng 15 minutos. Takpan. Pagkatapos ng 15 minuto ay

  • ½ - 1 kilo beef brisket
Vegetables:
  • 2 Medium sized carrots, peeled and cut into one-inch chunks
  • 3 Medium potatoes
  • 4 Medium onions, sliced
  • A bunch of Leek ( lauch )
  • ½ beef cube
  • 1 red bell pepper, sliced, cut

Marinate Mixture:
  • ½ cup catsup
  • 2 cups broth stock or water
  • 1 tablespoon vinegar
  • 1 tablespoon lemon Juice
  • 3 - 4 tablespoon redwine
  • 1 teaspoon Aroma fond, optional
  • 1 tablespoon mustard
  • 2 small onion, minced
  • 2 - 4 cloves garlic, minced
  • 1 tablespoon chilli sauce
  • 1/8 teaspoon cumin
  • 2 tablespoon worcestersauce
  • Salt and pepper to taste
Cooking Instructions:
  1. Ang karne ay linisan at patuyuin ng paper towel at ihalo ang Marinate Mixture, at ilagay sa shallow glass baking dish. Takpan at ilagay sa refrigerator magdamag.
  2. Painitin ang Oven: 180°C - 190°C
  3. Ihanda na ang nakababad na beef mixture at ikalat ang sibuyas bombay sa ibabaw sa beef mixture. Takpan at e-bake 3 hours.
  4. Pagkatapos ay ilagay sa beef mixture ang carrots, potatoes, beef cube, leeks, ( Lauch ), Takpan uli at patuloy ang pag bake ng 65 - 80 minuto hanggang ang beef at vegetables ay lumambot.

  • 1 - 1 ½ Cups water
  • 1 Cup white sugar

Procedure:

MOISTURIZING BODY SCRUB

Ingredients:
  • 1/2 cup liquid glycerin
  • · 1/2 cup water
  • · 2 1/2 to 3 cups sugar or salt (white sugar, brown sugar, or table salt)
  • · 1 teaspoon solid coconut butter or solid coconut oil
  • · 6 drops of essential oil of your choice, or combine several (not to exceed 6 drops)
Procedure:
  1. Combine glycerin, water, and one cup of sugar or table salt until the salt/sugar has mostly dissolved. Add the remainder of the sugar/salt until you have a rather pasty mixture, at a consistency you prefer.
  2. Meanwhile, melt the coconut butter or oil in a small container, in your microwave. MELT, but do not overheat.
  3. tir the melted coconut oil into your sugar mixture, and stir well. Last, add the six drops of essential oils of your choice, stirring to blend.
  4. Melt and add more coconut butter or oil to reach your desired consistency. Transfer your mixture to an airtight container or jar, and cool until slightly thickened. Use as an after shower or after bath moisturizing body scrub.

Garlic Buttered Crabs

Ingredients:
  • 6 pcs. Crabs
  • 4 - 6 pcs. whole black pepper, crushed
  • 2 tablespoons butter
  • 1 thumb ginger, sliced fine-strips
  • 1 pc. Maggi cube
  • 1 Cup chicken broth stock
  • 2 tablespoons flour
  • A dash of salt
For deep frying:
  • 4 Cups cooking oil
Cooking Procedure:
  1. Open crab by sepating top shell claws and splitting the Body into half.
  2. Remove gills and discards.
  3. Dredge crab in flour and season with salt.
  4. Deep fry crab in cooking oil. When it is done. Set aside.
  5. In a separate wok pour black pepper, and roast for a few second, then add butter, garlic, ginger, and crab. Stir
  6. Add chicken broth stock, Maggi cube. Simmer for 6 minutes.
  7. Correct seasoning with salt and pepper to taste
  8. Arrange on a platter and serve.

Young's Eskabitse With Tomato Catsup

Ingredients:
Fish:
  • ½ - 1 Kilo fish, sliced ( Cleaned )
  • Fish Season with: salt, pepper, lemon Juice and fry.
  • 1 - 2 Cups Oil for frying.
  • Ingredients for Young‘s Eskabitse Tomato Catsup:
  • 1 tablespoon cooking oil / Or: olive oil
  • 2 pcs. Large sized red onions, sliced into ring
  • 4 cloved garlic, minced
  • 2 thumbs ginger, cut in long thin Strips
  • ½ Cup tomato catsup
  • 2 Medium sized carrots, cut in long strips
  • 1 pcs. Small sized red bell pepper, sliced into ring ( Atsal )
  • 1 pcs. Small sized yellow bell pepper, sliced into ring ( Atsal )
  • A dash of ground black pepper
Combine sweet and sour mixture:
  • ½ Cup brown sugar
  • ½ teaspoon salt
  • 2 tablespoons coconut vinegar
  • 1 Cup broth stock or water
  • 2 - 3 tablespoon soya sauce
  • 1 - 2 teaspoon cream cornstarch, dispersed in 1 tablespoon water
Cooking Procedure:
  1. Fry fish and set aside.
  2. Combine vinegar, sugar, salt,broth stock, soya sauce and cornstarch. Set aside.
  3. Heat cooking oil and sauter garlic, onion, ginger, stir until lightly brown. Add tomato catsup. Continue stirring.
  4. Pour Sweet and Sour Mixture. Simmer for 6 - 8 minutes.
  5. Then add carrots. Simmer until carrots half cook.
  6. Add fried fish. And let it cook for 1 - 2 minutes and garnish with bell pepper. Serve
Garnishing:
  • Red Bell Pepper, sliced ring ( Atsal )
  • Yellow Bell Pepper, sliced ring ( Atsal )

Fried Zuchinni and Cauli Flower

Ingredients:
  • 1 pc Zuchinni
  • 300 grams. Cauli Flower, sliced
  • 1 egg, beaten
  • A dash of pepper
  • Salt to taste
  • Oil for frying
Procedure:
  1. Wash zuchinni, Cauli flower and sliced into flatten.
  2. In a bowl combine egg beaten, salt, pepper.
  3. Mix and and fry until light brown.

Pork IN HOneY Wood Smoke FLavour

Ingredients
  • 1/2 Kilo Pork Pork, boneless
MARINATE in:
  • 2 teaspoons woodsmoke flavour ( Mild BBQ sauce )
  • ½ teaspoon ground black pepper
  • 1 teaspoon Paprika powder
  • 1/8 teaspoon dried basilicom
  • 1 teaspoon oyster sauce
  • ½ teaspoon dried basilicom
  • 1/8 teaspoon dried Thymian
  • A dash of salt to taste
  • 3 tablespoons melted butter
  • 1 teaspoon *Garlic Olive Oil Dressing Mixture** ( Please search on my *Homepage*)
Cooking Procedure:
  1. Mix all ingredients into pork and marinate for 15 - 30 minutes.
  2. Fry pork marinate in 3 tablespoon melted butter, fry until done.
  3. Correct seasoning.
  4. Arrange on a platter
  • Serve with: French Fried (Pommes)
Garnishing:
  • cucumber sliced
  • red radish
