Fish:
- ½ - 1 Kilo fish, sliced ( Cleaned )
- Fish Season with: salt, pepper, lemon Juice and fry.
- 1 - 2 Cups Oil for frying.
- Ingredients for Young‘s Eskabitse Tomato Catsup:
- 1 tablespoon cooking oil / Or: olive oil
- 2 pcs. Large sized red onions, sliced into ring
- 4 cloved garlic, minced
- 2 thumbs ginger, cut in long thin Strips
- ½ Cup tomato catsup
- 2 Medium sized carrots, cut in long strips
- 1 pcs. Small sized red bell pepper, sliced into ring ( Atsal )
- 1 pcs. Small sized yellow bell pepper, sliced into ring ( Atsal )
- A dash of ground black pepper
- ½ Cup brown sugar
- ½ teaspoon salt
- 2 tablespoons coconut vinegar
- 1 Cup broth stock or water
- 2 - 3 tablespoon soya sauce
- 1 - 2 teaspoon cream cornstarch, dispersed in 1 tablespoon water
- Fry fish and set aside.
- Combine vinegar, sugar, salt,broth stock, soya sauce and cornstarch. Set aside.
- Heat cooking oil and sauter garlic, onion, ginger, stir until lightly brown. Add tomato catsup. Continue stirring.
- Pour Sweet and Sour Mixture. Simmer for 6 - 8 minutes.
- Then add carrots. Simmer until carrots half cook.
- Add fried fish. And let it cook for 1 - 2 minutes and garnish with bell pepper. Serve
- Red Bell Pepper, sliced ring ( Atsal )
- Yellow Bell Pepper, sliced ring ( Atsal )
