Mechado

Ingredients:
  • 1 Kilo beef kabilugan, whole
  • 3 - 4 tablespoons cooking oil
  • 6 cloves garlic, chopped
  • 4 pcs. onions, sliced
  • 3 pcs. Medium sized potatoes, quartered, fried
  • 1 carrot, cut in ½ round
  • 1 sliced dayap or lemond with rind
  • 3 tablespoons soy sauce
  • 6 pcs. Peppercorn, crushed
  • 1 Cup tomato sauce
  • 2 - 4 pcs. fresh tomatoes, chopped
  • 2 pcs. Laurel, bay leaf
  • 1 broth cube, dissolved
  • ½ teaspoon salt
  • 2 - 3 Cups hot water
Procedure:
  1. Brown meat in cooking oil. Set aside.
  2. In the same oil saute garlic, tomatoes and onions, cook for 6 minutes. Put in dayap, soy sauce, peppercorn, tomato sauce, laurel leaf, broth cube, and salt. Simmer for 2 minutes more. Add water, Cover and simmer.
  3. Add potatoes and carrot, when meat is tender.
  4. Slice meat. Arrange on a platter with vegetables.
  5. Strain sauce, pour over meat.
  6. correct seasoning.
