Yha-Young's Eskabitse Vinegar

Ingredients:
Fish:
  • ½ - 1 Kilo fish, sliced ( Cleaned )
  • Fish Season with: salt, pepper, lemon Juice and fry.
  • 1 - 2 Cups Oil for frying.
Ingredients for Yha-Young‘s Eskabitse Vinegar:
  • 1 tablespoon cooking oil / Or: olive oil
  • 2 pcs. Medium sized red onions, sliced into ring
  • 2 cloved garlic, minced
  • 2 thumbs ginger, diced
  • 2 Medium sized carrots, cut in rounds
  • 1 pcs. Small sized red bell pepper, diced
  • 1 pcs. Small sized green bell pepper, diced
  • 2- 4 pcs. Tomatoes, sliced
  • A dash of ground black pepper
Combine Coconut Vinegar mixture:
  • ½ Cup coconut vinegar or: Apple cider vinegar
  • ½ Cup brown sugar
  • ½ teaspoon salt
  • ½ - 1 Cup broth stock or water
  • 1 - 2 tablespoon soya sauce
  • 1 - 2 teaspoon cream cornstarch, dispersed in 1 tablespoon water
Cooking Procedure:
  1. Fry fish and set aside.
  2. Combine vinegar, sugar, salt,broth stock, soya sauce and cornstarch. Set aside.
  3. Heat cooking oil and sauter garlic, onion, ginger, stir until lightly brown. Add tomatoes. Continue stirring.
  4. Pour Sweet and Sour Mixture. Simmer for 6 minutes.
  5. Then add carrots. Simmer until carrots half cook.
  6. Add fried fish. And let it cook for 1 - 2 minutes and garnish with bell pepper. Serve!
Garnishing:
  • Red bell Pepper ( Atsal )
  • Green bell Pepper ( Atsal )
