YeLLow PorK CurrY WiTh BamBoo ShooTs



Ingredients:
  • 600 grams. Or ½ Kilo Pork Boneless, sliced cube
  • 1 teaspoon butter
  • 2 tablespoon yellow Curry paste
  • 1 - 2 fresh hot chillies, chopped
  • 1 - 2 tableapoons fish sauce
  • 200 - 250 grams. bamboo shoots
  • 50 grams. Leek, sliced ( lauch ) - optional
  • 2 pcs. Medium sized onions, sliced
  • 1 thumb ginger, sliced
  • 1 - 2 Cups pure coconut milk - / Or 1 can coconut milk, you can buy in Oriental Store / Asia Shop
  • 1 pc. medium carrot, sliced
  • 1 pc. broth cube
  • ½ teaspoon Salt
  • A dash of black pepper, powder
Cooking Procedure:
  1. Heat butter in a saucepan and saute garlic, ginger, onions until light brown. Add the meat and fry for 8 minutes until pork changes color, stirring constantly.
  2. Add half of the coconut milk, yellow paste, fresh sauce,broth cube and let it boil for 30 minutes in a low flame.
  3. Add carrot, leek, bamboo shoots, chillis, and add the rest of coconut milk and let it boil for another 8 minutes.
  4. Season with salt and pepper.
  5. Correct seasoning and serve hot! With Rice.
Garnishing: Parsley
Tipp:
  • Arrange Yellow pork Curry on a plate with rice and garnish with red radish.
