Ingredients:
- 600 grams. Or ½ Kilo Pork Boneless, sliced cube
- 1 teaspoon butter
- 2 tablespoon yellow Curry paste
- 1 - 2 fresh hot chillies, chopped
- 1 - 2 tableapoons fish sauce
- 200 - 250 grams. bamboo shoots
- 50 grams. Leek, sliced ( lauch ) - optional
- 2 pcs. Medium sized onions, sliced
- 1 thumb ginger, sliced
- 1 - 2 Cups pure coconut milk - / Or 1 can coconut milk, you can buy in Oriental Store / Asia Shop
- 1 pc. medium carrot, sliced
- 1 pc. broth cube
- ½ teaspoon Salt
- A dash of black pepper, powder
- Heat butter in a saucepan and saute garlic, ginger, onions until light brown. Add the meat and fry for 8 minutes until pork changes color, stirring constantly.
- Add half of the coconut milk, yellow paste, fresh sauce,broth cube and let it boil for 30 minutes in a low flame.
- Add carrot, leek, bamboo shoots, chillis, and add the rest of coconut milk and let it boil for another 8 minutes.
- Season with salt and pepper.
- Correct seasoning and serve hot! With Rice.
Tipp:
- Arrange Yellow pork Curry on a plate with rice and garnish with red radish.
