Chicken InasaL ALa Rich

Ingredients:
  • 1 - 2 Kilo chicken legs with thighs
Marinate Mixture:
  • 4 tablespoon calamansi or lemon juice
  • 4 tablespoon vinegar
  • 2 - 4 stalk lemon grass / tanglad
  • 1 tablespoon sugar
  • 1 teaspoon cumin
  • 2 tablespoon oyster sauce
  • 1 tablespoons paprika powder
  • 2 - 3 thumbs sized ginger, grated
  • 1/8 teaspoon ground black pepper powder
Sauce Mixture: for basting chicken legs on Grill:
  • Annato in oil / Atswete, dispersed
  • 1 tablespoon butter
  • Sauce from the marinade mixture.
  1. The left over marinade sauce add 1/2 cup of water and bring to boil for about 4 minutes in a low flame. Then add butter and annato/atswete to the sauce mixture. Stir and Set aside.
Cooking procedure:
  • Combine marinate mixture in a bowl. Marinate chicken legs in the mixture for about 4 hours or overnight. Keep covered in the refrigerator.
  • Remove chicken from the Marinade. Set aside.
  • Bake or Broil chicken legs in electric oven or in a hot live charcoal.
  • And baste chicken legs all the while with the prepared sauce mixture.
  • Serve with your home made delicious sauce or chilli sauce.
