Ingredients:- 1 - 2 Kilo chicken legs with thighs
Marinate Mixture:- 4 tablespoon calamansi or lemon juice
- 4 tablespoon vinegar
- 2 - 4 stalk lemon grass / tanglad
- 1 tablespoon sugar
- 1 teaspoon cumin
- 2 tablespoon oyster sauce
- 1 tablespoons paprika powder
- 2 - 3 thumbs sized ginger, grated
- 1/8 teaspoon ground black pepper powder
Sauce Mixture: for basting chicken legs on Grill:- Annato in oil / Atswete, dispersed
- 1 tablespoon butter
- Sauce from the marinade mixture.
- The left over marinade sauce add 1/2 cup of water and bring to boil for about 4 minutes in a low flame. Then add butter and annato/atswete to the sauce mixture. Stir and Set aside.
Cooking procedure:- Combine marinate mixture in a bowl. Marinate chicken legs in the mixture for about 4 hours or overnight. Keep covered in the refrigerator.
- Remove chicken from the Marinade. Set aside.
- Bake or Broil chicken legs in electric oven or in a hot live charcoal.
- And baste chicken legs all the while with the prepared sauce mixture.
- Serve with your home made delicious sauce or chilli sauce.
